Sometimes you just need chocolate! It’s no surprise that I love sweet things and baking, but sometimes I just want something delicious that’s not labor intensive nor something I’d have a lot of leftovers. We’re lucky to have frozen Maine blueberries available locally all year round. With the sweetness, texture and chill from those berries combined with a warm melted chocolate mixture, you end up with a 5 ingredient, 5 second fudge that’s both satisfying and a perfect bite when you just need some chocolate into your life.
ingredients
¼ cup frozen blueberries (raspberries would also work well)
1 ½ tablespoons nut butter
½ tablespoon coconut oil
1 tablespoon raw cacao powder
1-2 teaspoons honey or maple syrup
pinch of cinnamon
pinch of sea salt
Place the berries into a small bowl.
In a small pan, heat the last six ingredients together over low heat and whisk until smooth. Pour the chocolate mixture directly over the frozen berries and stir to combine.
